Chrissy Teigen's Banana Bundt Bread

Ingredients

Wet Ingredients

  • 4 brown bananas, mashed ~2 cups mashed bananas
  • 4 large eggs
  • 2/3 cup canola oil plus extra to grease and flour the pan

Dry Ingredients

  • 2 cups flour plus extra to grease and flour the pan
  • 2 cups white sugar
  • 1 box instant vanilla pudding (3.5 ounces)
  • 1 teaspoon baking soda
  • 1 teaspoon table salt

Add-Ins (Note 1)

  • 1/2 cup unsweetened coconut flakes you can add more!
  • 1/2 cup dark chocolate chunks I buy a nice bar of dark chocolate and chop it up myself. You can use whatever you want.

Instructions

  1. Preheat the oven to 325°. Grease and flour your bundt pan.

    In a large bowl combine the mashed bananas and wet ingredients. In a medium bowl stir the dry ingredients. Slowly add the dry to the wet. Use a rubber or wooden spatula to combine.

  2. Fold in the add-ins. Pour into the greased and floured bundt pan.

  3. Bake for 1 hour. Cake is done when it is golden brown and an inserted toothpick comes out clean!

  4. Let it cool. Once cool, use a butter knife to release the cake from the edges of the bundt pan. Invert the pan and flip the cake onto the serving plate.

Recipe Notes

Note 1: This banana bread would be great without anything added, it really is that freaking good! However I think the combo of dark chocolate and coconut is perfect. Other good add-ins would be nuts, etc.
