Preheat the oven to 325°. Grease and flour your bundt pan.
In a large bowl combine the mashed bananas and wet ingredients. In a medium bowl stir the dry ingredients. Slowly add the dry to the wet. Use a rubber or wooden spatula to combine.
Fold in the add-ins. Pour into the greased and floured bundt pan.
Bake for 1 hour. Cake is done when it is golden brown and an inserted toothpick comes out clean!
Let it cool. Once cool, use a butter knife to release the cake from the edges of the bundt pan. Invert the pan and flip the cake onto the serving plate.
Note 1: This banana bread would be great without anything added, it really is that freaking good! However I think the combo of dark chocolate and coconut is perfect. Other good add-ins would be nuts, etc.
