Chrissy Teigen’s Banana Bundt Bread

No doubt there are several online recipes for this exact banana bread, but this is my site and seeing as how I *personally* haven’t posted this recipe then I’m sure you’ll excuse me. Besides, you never know who or how you’ll be introduced to your next favorite recipe. Wouldn’t it be grand if you discovered this recipe through this website! Now onto the Banana Bread!

There are 2 main differences Chrissy Teigen uses in her recipe that set this apart from most banana breads. First she uses a Bundt pan (that one is obvious) and second she adds a pack of instant vanilla pudding to the batter. Neither are particularly novel but damn when they are combined they really do make something special!

First off, baking this in a bundt pan ensures you have hella surface area that browns and is delicious. You can eat this bread for daaaaays but that first day when the edges are all crisp (and there are so many edges, thanks to the bundt!) it is just astounding how good this tastes. She recommends eating this with salty butter and even though I didn’t do that I encourage you to do it! I’m sure it is freaking fabulous.

Second. The instant vanilla pudding. It adds so much moistness to the bread. When you eat it you get a slight vanilla pudding flavor at the end and it is very pleasing. If you are the kind of person that likes the smell of boxed cake mix, instant vanilla pudding mix, or even those sweet instant oatmeal packets then you will love what the pudding does to this bread!

This banana bundt bread is amazing. Banana bread is a real struggle for me because it just never turns out right. It is either to dry or too mushy. This one is just perfect! Thanks to Chrissy Teigen for this awesome recipe.

Ingredients

Wet Ingredients

  • 4 brown bananas, mashed ~2 cups mashed bananas
  • 4 large eggs
  • 2/3 cup canola oil plus extra to grease and flour the pan

Dry Ingredients

  • 2 cups flour plus extra to grease and flour the pan
  • 2 cups white sugar
  • 1 box instant vanilla pudding (3.5 ounces)
  • 1 teaspoon baking soda
  • 1 teaspoon table salt

Add-Ins (Note 1)

  • 1/2 cup unsweetened coconut flakes you can add more!
  • 1/2 cup dark chocolate chunks I buy a nice bar of dark chocolate and chop it up myself. You can use whatever you want.

Instructions

  1. Preheat the oven to 325°. Grease and flour your bundt pan.

    In a large bowl combine the mashed bananas and wet ingredients. In a medium bowl stir the dry ingredients. Slowly add the dry to the wet. Use a rubber or wooden spatula to combine.

  2. Fold in the add-ins. Pour into the greased and floured bundt pan.

  3. Bake for 1 hour. Cake is done when it is golden brown and an inserted toothpick comes out clean!

  4. Let it cool. Once cool, use a butter knife to release the cake from the edges of the bundt pan. Invert the pan and flip the cake onto the serving plate.

Recipe Notes

Note 1: This banana bread would be great without anything added, it really is that freaking good! However I think the combo of dark chocolate and coconut is perfect. Other good add-ins would be nuts, etc.
