Chickpea and Black Bean Deli Salad

6 basic ingredients. A few additional minor ones and you've got this delicious 2 bean salad that'll last you the week and get better day by day.

Ingredients

  • ½ medium onion, small dice
  • 1 medium bell pepper, diced
  • 1 15 oz. can chickpeas (garbanzo beans), drained and rinsed
  • 1 15 oz. can black beans, drained and rinsed
  • 1 lemon, zest and juice
  • 1 tbs honey
  • generous amount of salt, pepper, garlic powder, and dried herbs or use your favorite all purpose seasoning!

Instructions

  1. In a medium to large mixing bowl combine all the ingredients and stir to make sure everything is combined. Give it a taste and add more seasonings if you wish. Let marinate overnight. Salad will keep for 5 days. Makes 6 half cup (slightly heaping) servings. Enjoy!

Note 1: This recipe functions as the base of the salad. You can jazz it up from here but it's nice to have a bare bones recipe to fall back on.
