You ever walk through a bougie grocery store that has those beautiful deli displays? You know the ones. You can buy a green bean almond salad for 8.99 a pound or something. Well I love those displays and I dream of one day being baller enough that I can buy a Pinterest worthy picnic spread from them.

For now I gotta make do with my little budget and big appetite. So enter this basic no frills chickpea and black bean salad. This is a base recipe that can be jazzed up any which way. 2 weeks ago I ate it simple like this and it was delicious! Last week I added corn and it was a nice changeup but still so simple and easy! My boyfriend tosses it with his his meal prepped chicken or turkey to make a very filling high protein, high fiber salad.

The dressing here is your basic sweet and sour mix. My sweet is honey and my sour is lemon. Those two mix together and take the bit out of the raw onion and as the salad sits it kinda “cooks” in the acidity. I love this salad after a few days, the beans soften a bit and the veggies absorb the dressing. Salads that get better day by day are such a lifesaver during long work/school weeks.

Side store about this honey. Miere is the Romanian word for honey. It’s really special because this one comes from my cousin in Romania! Funny story, I actually bought this at the piata (farmers market) and it wasn’t until LATER that I found out the beekeeper who sold it to me is actually my cousin! Peciu Nou, my mom’s town, is a really small place so it shouldn’t be too surprising but it’s nice that I have a place filled with maternal relatives! Next time I go visit I am gonna buy at least 3 jars of honey from her. My cousins honey is fantastic and local honey in Romania is so damn cheap. Seriously…. if I bought local honey at a farmers market here in California it would be about 20 bucks for a jar HALF the size of that in the picture. This honey set me back 11 lei or under 3 U.S. dollars.

So local Romanian honey or not, I hope you try out this basic chickpea and blackbean deli salad! It’s a perfect meal prep dish and just gets better day by day!

Ingredients

  • ½ medium onion, small dice
  • 1 medium bell pepper, diced
  • 1 15 oz. can chickpeas (garbanzo beans), drained and rinsed
  • 1 15 oz. can black beans, drained and rinsed
  • 1 lemon, zest and juice
  • 1 tbs honey
  • generous amount of salt, pepper, garlic powder, and dried herbs or use your favorite all purpose seasoning!

Instructions

  1. In a medium to large mixing bowl combine all the ingredients and stir to make sure everything is combined. Give it a taste and add more seasonings if you wish. Let marinate overnight. Salad will keep for 5 days. Makes 6 half cup (slightly heaping) servings. Enjoy!

Note 1: This recipe functions as the base of the salad. You can jazz it up from here but it’s nice to have a bare bones recipe to fall back on.
