Budget Ham and Cheese Snack Box! Something both you and your wallet will enjoy! This snack box comes in at 359 calories, 13.9 g carbs, 24.8 g fat, and a whopping 22.8 g protein!!!

Spring Semester started this past Tuesday so I am keeping things simple with today’s post. I know this might be a little too basic to be called a “recipe” but I still think it’s valuable because so many snack boxes I see online use a lot of high cost ingredients. We’re talking brie, ~fancy~ packaged crackers, grapes -which are crazy expensive even when they’re in season!-, imported salami, etc.

This one keeps things simple with the following:

  • Packaged Deli Ham slices, we’re keeping thins basic and cheap here. Also, I unapologetically love packaged ham.
  • A boiled egg. Eggs are delicious and nutritious and keep very well after cooking.
  • Half an ounce of sharp cheddar cheese for flavor
  • 1 ounce of roasted peanuts, the often ignored -but highly delicious- nut.
  • and lastly some vegetables. I used carrots here because I like their sweetness but you can swap them for bell peppers, celery, spring peas or any other hardy vegetable that is crispy.

One thing you need for this recipe is a food scale. They are incredibly useful when measuring grams and ounces of foods for accuracy. Food scales aren’t just for people who want to be confident about how much calories they’re consuming but also for bakers and cooks!

Look for scales that have a “tare” feature which allows you to add -let’s say- 100 g of flour then you hit “tare” and the scale goes from 100 g to 0 g and then you can add in your 50 g of sugar and so on and so forth. This really eliminates the need to use a bunch of measuring cups! Popular sites like Smitten Kitchen and RecipeTin Eats even include gram measurements in all of their recipes so that you can easily use a food scale to make their recipes. I’m not there yet with my own recipes but one day I hope to be!

I don’t have any specific recommendations for a food scale, just head to any large grocery store or basic department store and they’ll have some. They are inexpensive and last years, all you’ll need to do is switch out the batteries every couple of years.

Now back to these snack boxes! I really hope they inspire you to create your own homemade snack box. I will say that sometimes these even replace a meal for me! I’ll just add an apple, a rice cake, and maybe some peanut butter to increase the overall calories and macros and it becomes a very filling meal when you just want to eat ALL the snacks!

Ingredients

  • 1 large egg, boiled
  • 1/2 ounce sharp cheddar cheese
  • 5-6 normal carrot sticks can sub for another hardy vegetable like celery, etc
  • 2 ounces Deli Ham can sub with Deli Turkey (this will change macros and calories)
  • 1 ounce roasted peanuts store in small container to retain crunch

Instructions

  1. Put all ingredients into a meal prep box, make sure to put peanuts into their own mini container so they don’t absorb too much moisture and lose their crunch! Snack box can keep for 3-4 days in the fridge. Keep chilled until you eat it. Enjoy!

Recipe Notes

Sometimes I like to add olives because they are low cal and pack a bunch of flavor!

This recipe makes one box. If you want more boxes just multiply all ingredients by however many boxes you want.
