Poached Chicken Salad with Tangy Herb Dressing

This poached chicken salad has become a weekly staple. Poaching the chicken makes it velvety and tender while also delivering a clean chicken flavor. The fresh dill and parsley herbs, tangy olives, and sweet pickles in the dressing give it a jump of flavor. I love serving this on sourdough toast for an extra dose of sour flavor and some crunch!

Sweet and Spicy Chili Garlic Noodles

I had dreams of buttery, spicy, and sweet noodles and this recipe fit the bill! I initially wanted something that could be eaten like a meal in of itself but that would have meant cluttering up these simple noodles with unecessary flavors and textures and I just couldn’t stand for that. So I present these as a simple side which are quick as a flash that are perfect hot or cold, and would go along with just about any grilled protein and sauteed greens. Or heck, just make it for meal prep! [ 301 calories per serving, 46.4 g Carbs, 9.1 g Fat, 8.4 g Protein]

Healthier Cheeseburger Salad

This healthier cheeseburger salad uses my chipotle chili meal prep ground turkey and in season summer tomatoes. It’s under 450 calories and it really satisfies those random cheeseburger cravings in a way that won’t sidetrack your progress!

So this cheeseburger salad came to me on a whim one day when I was craving a very specific burger from Izzy’s Burger Spa in South Lake Tahoe, California. I live in Sacramento which is about two hours away from Izzy’s and I have to occasionally remind myself that it would be crazy to drive two hours just to eat a burger, but this place has the best burgers I have had in my life. It’s a place with good prices and no frill burgers. I have to stop talking about them now because suddenly 2 hours doesn’t seem so far!
