Sweet and Spicy Chili Garlic Noodles

I had dreams of buttery, spicy, and sweet noodles and this recipe fit the bill! I initially wanted something that could be eaten like a meal in of itself but that would have meant cluttering up these simple noodles with unecessary flavors and textures and I just couldn’t stand for that. So I present these as a simple side which are quick as a flash that are perfect hot or cold, and would go along with just about any grilled protein and sauteed greens. Or heck, just make it for meal prep! [ 301 calories per serving, 46.4 g Carbs, 9.1 g Fat, 8.4 g Protein]

I don’t know if I would classify these as Chinese, Thai, Filipino, Vietnamese, or American. They use flavors present from all of these cuisines but I don’t think they are any one specific thing.

You got that Chili Garlic sauce with hollers with Thai and Vietnamese spiciness, the noodles are named Pancit so we could call them Filipino (side note: please tell me you have all had the luxury of eating Pancit, which is an extremely flavorful Filipino noodle dish, if not get on it and find some!) but also used in Chinese cooking, and the butter is just straight up American y’all.

When I first made this I initially wanted it to be a meal of itself but I felt that it was missing something. It didn’t have enough texture to stand on it’s own. The flavors were there, sure, but still… I wanted more. However after it was demolished in a single day between my sister, boyfriend, and myself I realized that this dish was simply a side dish.

It didn’t need to be cluttered up with a host of other ingredients. The spiciness and sweetness were perfect. That extra texture I was looking for could come in the form of grilled shrimp or chicken and -because veggies are important- some sautéed greens like bok choy or green beans.

I absolutely love that spicy sweet combo that many Southeast and East Asian-fusion recipes have and this recipe delivers on those flavors! In this recipe, my ego (aka my cravings) wrote a check that my body could cash! (Props to anyone who gets the reference). I also love that these noodles can easily fit into a diet. 300 calories a serving is really flexible, just pair it up with some lean grilled meat and some greens and you are good to go!

Sweet and Spicy Chili Garlic Noodles

These noodles are cooked in a flash and offer up a spicy heat tempered with sweetness. They are perfect as a side dish to some grilled chicken or shrimp and sauteed greens.

Ingredients

  • 16 ounces Fresh noodles Note 1
  • 2 tbs butter
  • 5 cloves fresh garlic, minced
  • 1-2 tsp ginger paste from a tube if using fresh ginger, halve it
  • 3 tbs brown sugar
  • 4 tbs chili garlic sauce (see photo for brand I used) can sub sriracha but halve it and go from there
  • 1 tbs soy sauce
  • 1-2 stems green onion, diced

Instructions

  1. Heat a small pot with water to boiling, add the noodles and cook for 1 minute. Drain, rinse with water and set aside.

  2. Heat a large pan to medium heat, add butter, garlic and ginger. Once butter melts increase heat a bit. You want the garlic and ginger to become fragrant and translucent but you don’t want the butter to brown! 

  3. Add the brown sugar and chili garlic sauce. Stir it all around in the pan then add the noodles and the soy sauce, even tossing the noodles so they get coated in the sauce. 
  4. Add in the soy sauce and diced green onion. Remove from heat. These noodles can be served hot or cold, depending on what they accompany. 

Recipe Notes

Note 1: I used a thick noodle labelled pancit from my local Chinese grocery. I love thick noodles because they offer awesome chew but this dish would also definitely go with a thinner noodle.

This recipe is perfect as a side dish or for meal prep. 

It can be eaten hot or cold.
