This open faced fried egg toast with herby dill is a fresh take on breakfast. It is protein packed, thanks to the combo of greek yogurt and eggs. The dill and red pepper flakes offer lots of flavor in an easy effortless way.
This impressive bouquet of dill has taken over my life, in the best way possible. It is my absolute favorite herb and I have been adding it to every recipe ever since buying it. Growing up Romanian, I can remember two main herbs being used in the kitchen: Parsley and Dill. My Mom must have been irritated with me a lot growing up because I hated Parsley, I thought it tasted like grass! Dill on the other hand was beyond delicious. It is perfume-y, but in a really good way!!!
Okay, now onto this sandwich! Grab some sliced bread, no need to get fancy here people. I toast mine in the oven for 10 minutes at anywhere from 350 to 400 degrees because just the thought of owning (and finding storage) for a toaster stresses me out. While it toasts, fry those eggs up in a pan with a little butter, oil, or even oil spray. I usually go for the last option because I love the convenience. Mix up some greek yogurt with fresh dill, red pepper flakes, minced garlic, salt and peppa. Then ASSEMBLE! Spread the yogurt mix over the toast, lay on the fried egg, sprinkle the egg with some seasonings (being Romanian and all, I used vegeta but use whatever you fancy!) and top with some extra fresh dill and red pepper flakes. Done and delicious!
So, go on and make these bad boys! Eat them on your patio with a nice drink in your hand and I am telling you it’ll be like eating brunch out at your favorite restaurant. Well except for dealing with the crowds and paying a hefty bill at the end.
Fried Egg Toast with Dill
Ingredients
- 1/2 cup greek yogurt
- 1 clove garlic minced
- 2 tbsp fresh dill heaping tbs
- salt + pepper
- 2 slices bread toasted
- 2 large eggs fried
- 1 tbs fresh dill heaping tbs
- 1 tsp red pepper flakes
- 1/2 tsp all purpose seasoning I used vegeta
Instructions

Mix together first five ingredients, spread liberally on toasted bread.

Place fried eggs on toast, top with fresh dill, red pepper flakes, and seasoning. Enjoy!
