Lazy Girl Apple Crisp

This lazy girl apple crisp is the perfect weeknight dessert for two! It has LESS than 10 ingredients and satisfies sweet tooth cravings without going overboard. I came up with this recipe out of pure laziness, hence the recipe name. [ 505 Calories, 71 g Carbs, 25 g Fat, 4 g Protein]

I had homemade granola on hand and was really craving a fall dessert. Apples, cinnamon, butter, and brown sugar all thrown into a pie dish create this delicious sugary, buttery sauce, then its topped with granola and ice cream (or whipped cream!). Yummy!

I also came up with this recipe so that I could use this pie dish. I have this thing where whenever I get a new kitchen tool I use it over and over again in quick succession! I do it so I can justify the cost. My mind goes “If I use this x times and bought it for y then the cost per use will be z…” when I’m looking at stuff in stores.

BTW: This pie pan was second hand and cost me 5 bucks. Still, I had to make it “worth it”. I am seriously that cheap.

Now back to my laziness. Yes I am sometimes too lazy to make crumble. Crumble is basic, I know this. However it is also very finicky and I do not have the patience to deal with alla that. (came this close to writing ‘dat’ but I just couldn’t, I cringe just seeing it)

Granola subs perfectly for it, so no big loss there. If you did want an actual fruit crisp, try this recipe!

I can also imagine this idea would be delicious with pears and a ginger-y granola. Actually I may just have to make that one and post it here because honestly doesn’t it sound super delicious!?

I like this with either whipped cream or ice cream. The former is good for a lighter dinner while the latter makes it that much more luxurious. I really gotta recommend halo top ice cream, it is a healthy ice cream (healthy here means low calories) that still taste quite delicious. It isn’t the same as full fat ice cream obviously but it is a damn good ice cream to have when your on a diet or trying to save some calories.

Ingredients

  • 2-3 cups peeled and sliced apples Fuji or Gala are my favorites
  • 1/2 tsp cinnamon
  • 2 tbs EACH water, brown sugar, butter*
  • 1 tsp Mexican vanilla
  • pinch of salt
  • 1/2 cup granola* for topping at end

For serving

  • whipped cream OR ice cream*

Instructions

  1. Preheat oven to 375 degrees. Add all ingredients (EXCEPT granola!) into a 9 inch pie plate, mix 'em all together and bake fro 25-30 minutes or until apples are soft and sugar has created a thickish sauce. 

  2. Remove pie pan from oven, add the granola, serve hot with whipped cream or ice cream!

Recipe Notes

NOTE 1: you can replace the butter with coconut oil to make this vegan

NOTE 2: Use THIS granola recipe, it makes excellent granola. If you have celiac disease, use certified gluten free whole oats.

NOTE 3: I use halo top ice cream, it is very low calorie but very tasty!

NOTE 4: Nutrition facts do not include whipped cream or ice cream. Every time I serve it I add different amounts, so just make sure to add it in if you track calories.
