End of Summer Stone Fruit & Berry Crisp

Celebrate the end of summer with this simple stone fruit & berry crisp. A slightly spiced cookie like crisp covers 3 cups of mixed plums, peaches, and berries. This recipe goes light on the crisp and heavy on the fruit because the latter is the best part of the summer. This crisp is fragrant, sweet, and bursting with juicy fruit.

Having long term weight loss goals means that you don’t get to eat whatever you want. I am committed to a healthier future so usually it isn’t too hard to go without certain foods, like desserts. USUALLY. 

However I also happen to get specific cravings and what I’ve learned is that the best thing to do is to satisfy my specific craving in order to maintain progress. When I try to “tough it out” then I almost always lose control.

Making desserts at home, like this sweet and fruity crisp, really help me. Cooking at home also means YOU are in total control over the ingredients and subsequently, the calories. So if you want to reduce the sugar in the filling in order to make it a better fit for you, go ahead!

 

In order to make this fruit crisp better fit into my daily calorie needs, I lightened up the crisp topping so that it resembles a slightly spiced oatmeal cookie. It is thinner so it gives a bit more crunch, but oh my goodness it is so good. SO GOOD.

Adding spices to dessert is also necessary in order to punch up the flavor in calorie free ways. I used Mexican vanilla (seriously… go buy some NOW, it is beyond delicious!!!), cinnamon, and powdered ginger. The last one always gets people but I wrote more about it here and why I almost always add it to my sweets and desserts.

Using a mix of fruits also helps add more flavor and texture. Any stone fruit works but I am partial to plums because I grew up with multiple plum trees in my childhood backyard and let me tell you, I lived off of  the fruit in the summers. 

 I left the plum skins on since they are easy to eat but I removed the peach skins because fuzzy skin is a big NO from me. I used frozen berries because honestly sweet summer berries are so juicy and luscious that I’d hate to eat them any way but raw.

I ate this crisp with and without whipped cream and honestly I can not pick a favorite between the two. It really all depends on your mood. Feeling a little deprived and in need of a celebratory dessert? Serve it with the cream! Or you just want a simple, glorious, dessert thats celebrates summer fruit? Serve it plain! Ingredients

Crisp Filling

  • 1 cup sliced plums about 3-4 large fresh plums
  • 1 cup sliced peaches, peeled about 2-3 large fresh peaches
  • 1 cup mixed berries fresh or frozen
  • 1.5 tsp Mexican vanilla
  • 1 tbs cornstarch
  • 1/2 cup brown sugar* tightly packed

Crisp Topping

  • 1/3 cup All Purpose Flour spooned and leveled
  • 1/3 cup whole oats
  • 1/3 cup brown sugar loosely packed
  • 3 tbs unsalted butter
  • 1/2 tsp cinnamon optional
  • 1/4 tsp powdered ginger optional
  • pinch of salt

For serving

  • whipped cream optional

Instructions

  1. Preheat oven to 350 degrees. In a medium bowl mix together your filling ingredients. If the mix is very watery add a tsp more of cornstarch.

  2. In a small bowl combine the crisp topping ingredients with a fork until butter is fully mixed through.

  3. Grease a 9 in. pie pan (or something similar sized, just don't go bigger than 9 in.) and assemble the crisp. Baked for 30-35 minutes until the crisp is brown and settled. Enjoy hot or cool with some whipped cream. Enjoy!

Recipe Notes

*If your fruit is very sweet then you can half the amount of brown sugar, from 1/2 cup to 1/4 cup. I have done this once or twice and the dish was still perfectly sweet.

This crisp creates a thing cookie like topping, if you want a thicker crisp then just double the crisp ingredients! Easy peasy!

You can omit the cinnamon and ginger spices but I always think they a little bit of something extra, especially the ginger.
