Yogurt con Fruta ( Mexican Yogurt Parfaits )

Mexican Yogurt con Fruta is like a parfait but better! Yogurt con Fruta isn’t limited to berries, you can use any fruit! Also the yogurt here is thinned out so that its drinkable and oh so delicious. Then it’s topped with coconut and granola! YUM!

If you go to a small Mexican ice cream or snack shop, you should be able to get these little yogurt con fruta. They come in plastic cups with a domed lid and a spoon or fork. It is also traditional to add raisins but I chose to leave those out.

I love these because since the granola stays on top so it doesn’t get all mushy like with traditional parfaits. I also love how much fruit there is! It is a great breakfast, snack, or dessert option.

My boyfriend is Mexican so that means I get to experience authentic Mexican food. Most people in California are familiar with Mexican-American food, which is really different than the traditional food. These little snacks are such a fun and healthy treat that most people wouldn’t associate with Mexican food.

Ingredients

  • 1 cup sweet flavored yogurt honey or vanilla yogurt are my favorite
  • milk for thinning out yogurt
  • 2 cups chopped fruit Note 1
  • 3/4 cup granola Note 2
  • 1/2 cup coconut flakes, unsweetened

Instructions

  1. Thin out yogurt with a bit of milk, it should be pourable but still thick.

  2. Pour a bit of the thinned yogurt into two jars or cups, layer fruit between two jars/cups, pour the rest of the thinned out yogurt over the fruit. Top with granola and coconut flakes. Serve immediately. Enjoy!

Recipe Notes

Note 1: Use your favorite fruits! I love a combo of summer fruits alongside banana for  maximum filling-ness. In this recipe I used peaches, strawberries, and bananas.
