Fried Egg and Pesto Sandwich

Summertime sandwich! This one uses a fried egg, strong cheese, summer tomatoes, lettuce, mayo, and pesto of course! All sandwiched between lightly toasted bread, this sandwich brings together the best flavors and textures.

I’m not a big breakfast person but fried egg sandwiches are one of my exceptions. The crusty brown edges. The slight soft yolk center (never runny, because that just interferes with the sandwich). An assortment of toppings, sauces, and spices. All sorted between two lightly toasted pieces of bread.

To get those crispy brown edges and soft yolk interior I finish off my fried egg OFF the heat with a lid on the pan. The residual heat of the pan gets trapped and it gently cooks the egg yolk. Easy, Lazy perfection. Which is what breakfast should be.

The thing about cooking is that while it is enjoyable and relaxing, nothing beats hearing praise about your cooking. My boyfriend eats these sandwiches with so much gusto I swear I could blush! Like he does all the dramatic pauses, he leans back in his chair, he nods his head… basically he doesn’t only tell me that he loves this sandwich, he SHOWS it! So make a few of these sandwiches and share them with close family and friends. I’m sure they’ll be grateful!

Like with any sandwich, it’s all about the elements. Why is this sandwich so frikkin good? Let’s consider the following:

  • buttery and herby pesto
  • creamy mayo
  • salt and peppered summer tomatoes (I do this with almost all my summer sandwiches and it just kicks them up SO MUCH!!!)
  • toasted bread that offers crunch
  • lettuce for that crispy freshness
  • fried egg with a creamy center

How could a sandwich have all of that and not taste delicious!? I hope you enjoy this recipe as much as I have.

Ingredients

  • 1/2 tbs oil see Note 1
  • 1 large egg
  • 2 tbs sharp cheddar or parmesan see Note 2
  • 2 slices thick bread, lightly toasted
  • 1/2 tbs mayo
  • salt and pepper
  • 3-4 slices tomatoes
  • 1-2 leaves romaine lettuce
  • 1/2 tbs pesto

Instructions

  1. Heat up oil in a pan on medium heat. Add egg and sprinkle cheese on top of egg. Cook until whites are done and edges are crispy. The yolk should be most uncooked and very yellow. Remove pan from heat and put a lid on it, let sit for a minute or two.

  2. Meanwhile, as the yolk cooks, assemble the sandwich. On one bread slice, spread the mayonnaise then lay on the tomato slices. Add salt and pepper to the tomato slices then top it with lettuce.

  3. On the other bread slice, add the pesto and fried egg. Combine the bread slices and press them together with a lil force, then slice any way you like and eat it hot! Enjoy!

Recipe Notes

Note 1: If you are using a nonstick pan, you don’t have to use oil. You can just lightly coat the pan with some spray oil and the egg will cook just fine.

Note 2: Any strong flavored cheese will do, such as sharp cheddar or parmesan.
