Fried Bologna and Omelette Ciabatta Breakfast Sandwich

I am bringing you yet another breakfast sandwich! Eggs are the best breakfast, hands down. Egg sandwiches? Now that is just perfection on perfection. I made an omelette, stuffed it with only the finest hand crafted cheese (ahem, velveeta), topped it with a pan fried slice of bologna, a smear of mayo, a few healthy dashes of hot sauce. It’s served on toasted ciabatta slices for the ultimate crispy crust and fluffy interior. Say hello to your new favorite breakfast sandwich.

Fried Bologna and Omelette Ciabatta Breakfast Sandwich

There really isn’t much to say about this sandwich. It’s like a riff on a classic ham and cheese sandwich but made a little more filling because we used an omelette. I know some people take issue with American cheese, velveeta, or “processed cheese product” but this dish really goes so well with it. You can always use cheddar or another cheese but it won’t taste as good.

Same thing for the bologna. I want those thick, circular, pre-packaged deli slices. I used a honey turkey bologna, but you use whatever flavor you want! I fry it up to get it warmed through and a bit crispy/browned. The ingredients may seem a little unconventional but this breakfast sandwich packs a serious flavor punch. Don’t try to make this a high-brow dish.

We are using low cost ingredients in a fun and inventive way! Some of us grew up on really cheap sandwiches consisting of soft white bread, mayo, processed American cheese slices, and bologna.* This recipe plays off of that childhood dish but gives it enough edge that you’d be happy to eat it as an adult.

*Ima be real. I did NOT grow up with that. My mom made home bread very often meanwhile I used to get upset because I wanted wonder-bread instead. Yeah, I was a flipping brat. I’m also the youngest of six so the brat-titude is to be expected. Lol. BUT I have eaten those simple ham and cheese sandwiches as an adult; so basically, I’ve done my research on this.

I feel confident that you will really enjoy this breakfast sandwich if you make it. This is not only very flavorful but it is also a very filling sandwich. I have eaten this for dinner on more than one occasion and I have been fully satisfied.

Ingredients

  • 1 cooked omelette Note 1 for recipe
  • 1 slice American cheese Note 1
  • 1 ciabatta sandwich roll
  • 1 slice bologna
  • 1 tbs mayo
  • a couple dashes hot sauce
  • a few lettuce leaves

For serving:

  • dill pickle spear optional, but really rounds out the flavors.

Instructions

  1. Make the omelette, fill it with the American cheese. When it is finished, set aside in a 170° oven to keep warm while you assemble the rest of the sandwich. Toast up the ciabatta sandwich roll.

  2. In the same pan you made the omelette in, fry up the bologna slice. You don't need any oil, the bologna should be fatty enough to cook in whatever fat it releases. You wanna get it warmed through, crispy on the edges, with some browning on both sides.

  3. Split the toasted ciabatta sandwich roll. Put some lettuce on the bottom piece then top that with the crispy and browned bologna. On the top slice, smear the mayo and couple dashes of hot sauce. Cut the omelette in half and place both slices onto the bologna. Close the sandwich and eat!!!

Note 1, continued: When you make the omelette recipe, use a slice of American cheese (or a velveeta cheese slice) for the cheese. 

Serving notes:

I sometimes serve only half the omelette on the sandwich and eat the other half on the plate. Sever it however you want.
