Meal Prep Baked Eggs
These baked eggs make the perfect breakfast. Whether you put them in tacos or english muffins (I’ve done both and honestly, they are awesome all the way around). They offer up friendly macros at under 100 calories, 6g of protein, 5g of fat, and under 4g carbs. This leaves you lots of wiggle room on how to serve them for breakfast.
Now I make mine a little differently because I roast my veggies BEFORE I add the egg mixture. Honestly this part is absolutely mandatory unless you enjoy crunchy bits of onion? Oh, you don’t. Well then you are going to love this recipe!
Pet peeve rant: you know those food videos popular among social media? One thing I cannot stand is how none of these major food sites know how to cook vegetables. You cannot add raw veggies into dishes and expect them to be cooked. It is disgusting and makes me upset every. single. time. It is nonsense. This reminds of a hilarious video where professional chef Matty Matheson reviews popular food videos. Seriously, go watch it!
Cheddar and Dill Tuna Oven Melt
Easy recipe that works during any time of day and provides 30 grams of protein!! Cheddar and dill dress up the tuna flavors. The oven does all of the hard work: toasting the bread, warming the tuna, and broiling the cheddar! A satisfying AND healthy meal in less than 10 minutes!
End of Summer Stone Fruit & Berry Crisp
Celebrate the end of summer with this simple stone fruit & berry crisp. A slightly spiced cookie like crisp covers 3 cups of mixed plums, peaches, and berries. This recipe goes light on the crisp and heavy on the fruit because the latter is the best part of the summer. This crisp is fragrant, sweet, and bursting with juicy fruit.

Healthier Cheeseburger Salad
This healthier cheeseburger salad uses my chipotle chili meal prep ground turkey and in season summer tomatoes. It’s under 450 calories and it really satisfies those random cheeseburger cravings in a way that won’t sidetrack your progress!
So this cheeseburger salad came to me on a whim one day when I was craving a very specific burger from Izzy’s Burger Spa in South Lake Tahoe, California. I live in Sacramento which is about two hours away from Izzy’s and I have to occasionally remind myself that it would be crazy to drive two hours just to eat a burger, but this place has the best burgers I have had in my life. It’s a place with good prices and no frill burgers. I have to stop talking about them now because suddenly 2 hours doesn’t seem so far!
Chipotle Chili Ground Turkey Meal Prep
This ground turkey recipe is jam packed with flavor thanks to one main ingredient. The Chipotle chili pepper adds a tremendous amount of smoky sweet flavor that really makes this turkey recipe special. It tastes delicious for meal prep whether you put it on rice bowls, in salads, tacos or even in quesadillas.
I am not big meat eater and usually turkey was only something I ate when my family celebrated Thanksgiving. Within the past few years though my boyfriend was really looking for cheaper, leaner meats to add to his diet and he started eating a lot of ground turkey. He’d liberally douse it in worcestershire and a mix of spices and bake it for his meal prep. I kid you not he ate it that way for over a YEAR (more like years, if I am being honest). That is like food torture for me so I can’t even imagine doing that. So I kinda (lovingly) pushed him into trying new recipes and he found one that has stood the test of time.
SIDENOTE: Can we talk about the word “worcestershire”, I mean that is just a WORD ya know. Like it has a certain way about it… A way about it that is annoying because I can never remember how to spell it.
Meal Prep Peach Pie Overnight Oats
Peach Pie overnight oats with tons of peachy flavor and the perfect amount of sweetness. This makes such a filling breakfast yet the recipe is under 300 calories! Feel like you want a larger breakfast? Just double the ingredients, it is as easy as that! Peaches, cinnamon, and vanilla are the absolute stars here, so do not skimp out on them.
Simple Stress Free Granola
This granola right here is the bees knees! It is simple, easy, and it works!!! I have made this recipe 3 times and it is a keeper. It uses stuff I usually have on hand like coconut flakes, whole flax seeds (why did I buy such a huge bag again?), honey (or maple syrup!), and I can easily vary it up by changing spices. I am thinking a batch of pumpkin pie spice granola is on the books for fall.
